Preheat the air fryer by running it at 400 °F for 5 minutes.
Peel and wash the sweet potatoes, and cut into sticks ¼ inch thick.

Place the sweet potato fries in a bowl and drizzle with olive oil. Sprinkle with salt and pepper then toss to coat evenly.

Spread out the sweet potato fries in an even layer in the air fryer basket. Make sure there is not overlap, and some space around the fries for the air to circulate.
Set your air fryer timer to 8 minutes and the temperature to 400 °F.
After 8 minutes, remove the fry basket and shake it around a few times to ensure even cooking. Then place it back in the air fryer cook for another 7 minutes.
Check and see if the fries are cooked to your liking. If not, add 3-5 minutes more.

Sweet potato fries are best eaten directly after cooking, while they're still hot and crispy. However, you can also store leftoves.
